In a Russian bakery bankruptcy, perishable food cannot wait for a routine long inventory: shelf life, storage and safety must be checked alongside title and value. Prepaid customer orders, supplier ingredients, finished food, ovens and refrigeration, premises, cash receipts and employee obligations all require separate treatment.
Time is critical
Expired or unsafe ingredients cannot be valued as ordinary saleable stock.

Equipment may be owned, leased, secured or purchased on instalments.

For a cake, catering order, delivery or gift card, identify the seller, specification, due date, payment and any output already delivered. Where production began, assess whether the result has value for the particular customer and conforms to the agreed order.

Ovens, proofers, mixers, refrigerated displays, coffee equipment and ventilation need separate asset records. Review title, serial number, lease, finance lease, security, installation and removability. Premises improvements should not automatically be merged with movable equipment.
Suppliers, Receipts and Staff
A supplier retains title to specific goods only where the contractual and factual basis supports it; an unpaid invoice alone does not always prove third-party ownership. Cash and acquiring should be reconciled with refunds and delivery platforms. Employee and trade claims are classified by legal basis and origin date.

Customer Evidence
